Broccoli Salad

I just love that type of salad! has anyone else had it before?
I just made up a "batch" for the rest of the week!!!

Aaaaaaaaaaah -drool- I LOVE it, it's so yummy. I don't even know why, it's so simple but I really love it. I put cranberries in it instead of bacon, or sometimes just broccoli. it's yummy.

Here's how I make mine:
2 Bunches of broccoli
Grated cheese as desired
Crumbled bacon or bacon bit as desired
Diced red onion as desired
Sauce:
3/4 C Mayo
1/4 Cup sugar
4T White Vinegar

I get all the ingrediants prepared ahead of time and put everything together before I need it.

ok i put 1cup Mayo, 1/4 cup vinegar, 1/4 cup sugar
4 cups broccoli florets
1 cup grated cheese
1/2 cup diced red onion
bacon

mmmmmmmmmmm

I think next time I will cut the dressing down a bit...but it is soooo tasty! I have read that of adding in cauliflower..sounds yummy!

I have had this yummy salad with the addition of raisins and nuts (walnuts, pecans and almonds are a good choice, toasted). This is the type of salad that has endless possibilities for additions. Even the cheese can be substituted.

Sunflower seeds would also be yummy in this salad.

My mother in law brought one today for double birthday party (mine and son), it included cauliflower as well as broccoli. Delicious!!

You can use splenda. I use cane sugar, and it sometimes doesn't dissolve the whole way, but splenda does.

I can't make anything to save my life, but love this salad. Do you have the complete recipe that has the raisins in it?

Here's my recipe Sheila;
soak about 1/2 to 3/4 cup raisin's in orange juice for aprox. 15-20 min. (I like golden raisin's)
Dressing:
3/4 cup mayo
1/2 cup sugar or splenda
4 TBSP vinegar


Salad:
1large bunch broccolli chopped very fine
1/4 cup red onion diced very fine
1/2 package cooked bacon chopped very fine
1 cup cheddar cheese chopped fine
Add drained raisins to above and add dressing. Mix well and chill in fridge for a couple hrs to enhance flavours.
